EOLIA: THE NAME

Eolia derives from Aeolus who was the God and divine keeper of the wind in Greek mythology and Elia from the Greek word for olive tree.
The olive tree, the eternal symbol of goodness, the precious and beloved gift of the Greeks, associated with rebirth and light, considered a divine gift, a symbol of peace, protection and fertility.

Eolia restaurant is entering a new era of gastronomy through its collaboration with the award-winning Greek chef Giannis Baxevanis, an Ambassador of the Greek Cuisine.

Enjoying a long and successful career, chef Giannis Baxevanis is a ‘maitre’ of traditional Greek products and innovator in the use of fresh local ingredients.

Chef Baxevanis has succeeded in highlighting traditional Greek recipes and transforming them through a contemporary eye into dishes of a superior gastronomy level, and a Mouth-watering Mediterranean cuisine
The dishes aim to add a new dimension to traditional Greek recipes, while accompanied by the hotel’s extensive wine list, which boasts labels from Greek vineyards.
